Dough consistency should be Roti/Chapati dough consistency. Rest the dough for 15 to 20 minutes. Knead the dough again, make dumplings of equal size, it makes about 4 parotta. Rest the dough again for 15 mins. Combine Ghee and butter in a bowl and melt together in a microwave or on a stove. Roll the dough as thin as possible, don't worry about its shape. Apply Ghee and butter mixture thoroughly on top of rolled parotta. Once it's rolled, make thin slices of the rolled parotta using pizza cutter or knife(check the video). Gather all the slices of parotta and roll them in your finger to make it a dumping again ( Check the video) Rest the slices of parotta dumplings again for 5 to 10 minutes. Grease a plate with Ghee and butter mixture, take dumping of sliced parotta pat them gently and give a round shape ( check the video) Heat the Tawa, add 2 tsp of ghee once it's hot, place the parotta on tawa cook in medium heat till it gets the brown spot on both the sides. Add ghee on both sides while it is getting cooked. Once the parotta's are cooked, smash them in your hands to separate the layers ( Check the video) Enjoy this soft, crispy and multi-layered parotta with delicious curry. Notes While dough is resting, cover them with a cling film or damped cloth so that dough doesn't get dry. Recipe 3 cups all purpose flour . 1/4 cup semolina . 1/4 tbsp salt and sugar and oil or ghee for make dough with all ingredients like we normally make. take one part and make chapati as big as possible spread some oil and cut chapati into long strips with knife .gently collect all strips. roll up strips with with hand make chapati shape again with hand and cook on tawa or pan on low flame . cook both side and spread oil each side.

Please allow dough to settle under the wet cloth for minimum of two hours.......... Make sure 20 minutes rest period between making balls,flattening out and rolling.......... Always serve hot....

This is an exciting paratha with so many thin layers that increase its taste and texture. A totally different experience when you eat it. Once you start, its hard to stop. Keep aside for 30 minutes. Divide the dough into equal size balls. Roll each ball with a rolling pin to a thin circle. Grease it with oil. Cut the circle in 1" strip. or follow the steps shown in video. Spread oil over it. Press lightly the strips towards the centre to show the layers clearly. Again roll it. Shallow fry the lachha paratha on a preheated tawa. Spread ghee & fry over low heat until golden brown. Serve hot with curry.
